Just throwing out here that I'm recreating most of these on Soul Calibur in my boredom time. XD So far I've recreated and enjoyed fighting:

This won't be in any specific order since I love a lot of fights, but here it goes!
Asch: For the first fight, I'm a fan of cutscenes happening during a battle, and this fight had three! :D It was also fun trying to beat him when you didn't have to. For the second fight, you could just tell so much was on the line. When Meaning of Birth started playing you just KNEW it was a fight you had to win, no matter what. There was so much emotion in that battle, and the song was amazing and appropriate.

Final Van: Once again, huge fan of cutscenes happening during a battle! The way it transitioned between forms and songs was pretty awesome. :D All three forms meant so much after I found out that it actually used Karma's lyrics to form the titles of the three boss songs:
"Yes, I'm sure we'll meet each other When it's time to raise the cross for those reasons we buried"
"I'm right here. You can touch me. We're together, a place in the sun only made for one"
"We'll finish the promise and be one."
Also, the Grand Fonic Hymn part in Finish the Promise? Amazing. The Abyss part in Time to Raise the Cross and Finish the Promise? Also amazing. I loved that pretty much everyone in your party had something to do with the final boss as well, instead of it just being some random person out to destroy the world just because. He was also the only final boss to make me run out of life bottles.

Sync: I always loved fighting the kid. XD He was actually a challenge, especially during his final fight. I lost count of how many times I got wrecked by Akashic Torment.

Flynn: I like that this fight wasn't a deathly serious one, and Fury Sparks = <3. I loved the conversation Yuri and Flynn had during the battle as well. XD It's a shame it was an easy battle, but it was still fun, nonetheless.

Estelle: When The Full Moon and the Morning Star started playing, I actually felt chills. I felt so bad for her, and Yuri was ready to do what was necessary if he couldn't talk some sense into her. ;_;

I think that's it for me. I'm probably missing a ton, but hey! My memory sucks.

Easy. The last battle with Mithos from Tales of Symphonia. I love that game!! Being the first Tales of game that I played, I have a great fondness of the game itself. The battles were fun and at times very challenging for an eleven year old (how old I was when I played TOS).
But Mithos' battle effected me the most, since...you really don't want to fight him. At least I didn't. Sure he hurt many people and acted selfishly to revive his sister, but overall, Mithos was a good guy. He did, after all, save the world once. And how was he repayed? By his sister being killed. Still, I found the conversation in battle interesting.
Anyway, thats one of my favorties. Too tired to name the rest....

The Sylph (ToS). I was SO into that battle, a "OUCH YOU BASTARD" would slip out of my tongue whenever one of my team gets hit. xDDD It was so crazy. Flynn (ToV). Great theme, AWESOME lil' convo xD and I loved beating the crap outta the great Flynn he grew on me after the battle, though xD
