A series with a mature plotline... off the top of my head, Monster. But most of the anime I know are made a few years ago or earlier, so no recommendations for newer anime from me.

Serious and dramatic with a touch of humor and supernatural? How about Darker than Black? Baccano and Durarara comes to mind too for the same reason though they're considerably lighter (It's hard to get darker than darker than black). For all three however, the plot will require considerable thought just to follow, but they were meant to be viewed as almost mysteries.
These examples take place over a smaller scale than Fullmetal Alchemist but have some pretty well fleshed out characters and plots. And yes, Steins;Gate is great and amazing and everyone should watch it.

you should give future diaries a go if your looking for something with a death note vibe do it or baka an test for some light hearted fun and or puella magi madokka girls for a bit of both
